WINE MAKING
Hand-picked from Lakeview Harvesters in Niagara-on-the-Lake. The wine was created from two varietals, 87% from Vidal (picked December 31, 2017 at 30˚ Brix), and 13% from Riesling (picked December 26, 2017 at 40˚ Brix) with an average Brix reading of 31.2˚. The juice was cool fermented in stainless steel, then aged ‘sur lie’ for an extended period of time to enhance mouth-feel and weight.
FLAVOUR PROFILE
Delicate copper yellow colour with an alluring aroma of white peach, yellow apple, lemon drops and marmalade. Medium-sweet and luscious. Wonderful flavours of lemon drops, peach, quince and fig explode on the palate and linger on the finish with an added note of floral honey. This wine is perfectly balanced between natural sweetness and bracing acidity.
SERVING SUGGESTIONS
Serve chilled at 8 to 10˚C. Serve with desserts that are less sweet than the wine that may include flavours of peach, star-fruit, mango, citrus, apricot, pear and apple. Lovely with apple strudel, poached pear, lemon pound cake, and apricot flan. Also enjoy with nut-based cakes, creamy custards and carrot cake. For a flavour explosion serve with spicy Asian appetizers; salt cod canapés; Asiago, delicate blue cheese and aged cheddar with a crusty baguette. This wine will continue to develop through 2023.
