Tiny delicate bubbles rise through a yellow straw-coloured backdrop. After 120 months aging ‘sur lie’, the bouquet shows wonderful notes of brioche, toasted almond and hazelnut, baked red apple, poached pear, and fresh bread. This dry, medium to full-bodied, flavourful sparkling wine has refreshing acidity and a creamy expanding mousse, along with rich flavours of baked apple, grilled citrus slices, toast, and yeast. Savour the long lingering finish, which shows notes similar to the palate, with an added note of mineral.
