Limited production - only one barrel made!
A classic blend of 50.2% Merlot, 25.1% Cabernet Franc and 24.7% Cabernet Sauvignon, all harvested from the Four Mile Creek sub-appellation within the Niagara Peninsula. Each varietal was barrel aged separately in 100% French oak barrels for 18 months, prior to creating the final assemblage, and underwent barrel malolactic fermentation. The final assemblage was created by selecting the best single barrel of each varietal that exhibited the greatest depth of extract, structure, and complexity. The final blend was put back into barrel for a further two months and the top single barrel was selected. No.99 “The Icon” is only produced in classic red wine vintages (2010, 2012, 2016, 2019).
Deep garnet in colour, with a warm, rich bouquet of dark plum, black cherry, smoky oak, cigar box, spice, and vanilla bean. This full-bodied red wine has firm drying tannins, and flavours of ripe dark fruits, cocoa, and vanilla extract. Notes of black tea, cocoa powder, black currant, and sweet spice linger endlessly on the finish. A wine to savour.
Serve with three- to five-year-old aged cheddar with walnut crackers; grilled medium-rare cuts of beef; roasted leg of lamb; wild game meats; roasted root vegetables; sautéed mushrooms.
Drink now to 2029 or perhaps longer. Decanting is recommended if consuming before 2024.
