WINE MAKING
This small lot Icewine is harvested from naturally frozen Vidal grapes from Niagara Peninsula vineyards at minus 10°C. Pressed frozen, releasing the pure extract from each grape. The juice is cool fermented to retain freshness and bright fruit flavours, and 10% of the wine is fermented in oak barrels to build texture and complexity.

FLAVOUR PROFILE
This Vidal Icewine has a bright yellow gold colour with a classic bouquet of peach, yellow apple, golden kiwi, mandarin orange, and floral honey. The rich, luscious, yet still elegant mouthfeel is perfectly balanced between sweetness and acidity. Flavours of sweet citrus, candied pineapple and golden kiwi explode on the palate, then notes of tangy sweet citrus and delicate honey linger on the amazingly long finish.

SERVING SUGGESTIONS
Serve chilled at 8 to 10°C in small white wine glasses, 1 to 2 oz per person. Enjoy before a meal, chilled with your favourite vodka and a couple of frozen grapes for an amazing Icewine Martini. Enjoy during a meal with pâté; spicy fish cakes; spicy Asian vegetable rolls; spicy Thai dishes; Thai mango salad. Enjoy with the cheese course which may include hard aged cheeses, 2 to 5-year-old Canadian cheddar or blue cheeses. Enjoy with fruit-based desserts of pineapple, apple, peach, pear, melon, and apricot. Serve with apricot and cream crêpes; apple strudel; peach pie; apricot fruit flan; poached pears.
