WINE MAKING

The Pinot Grigio is harvested from key vineyards across the Niagara Peninsula that provide perfect growing conditions for this varietal. A very gentle pressing, just enough to burst the skins, allows the free run juice to be separated from its skins. The juice is cool fermented and aged in stainless steel tanks for pure fruit expression.

FLAVOUR PROFILE

Clear and bright with a slight copper hue. A fresh clean aroma of Bartlett pear, yellow apple, apricot, and spring blossoms gently rise from the glass. A light, fresh and easy-drinking Pinot Grigio with flavours of green apple, green pear, honeydew melon, and citrus, which also linger on the finish, with an added note of spice.

SERVING SUGGESTIONS

Serve chilled at 10 to 12ºC to enhance the refreshing acidity of this wine; or serve slightly warmer at 13 to 15ºC to allow for rich fruit development and a softer mouthfeel. Fabulous sipping wine when friends gather. Wonderful with pan-fried freshwater fish; roast chicken; turkey wraps; crab cakes; sushi; Brie and pear slices on baguette; smoked salmon rolls; poached salmon; salmon quiche.
