WINE MAKING
A traditional ‘méthode’ sparkling wine made with hand-picked, whole-cluster pressed and fractioned grapes. The base wine assemblage consists of (75%) Chardonnay, (24%) Pinot Noir, and (1%) Pinot Meunier grapes, all aged in stainless steel just before tirage. After 12 to 14 months on lees the wine is disgorged, and a 90ml dosage of Vidal Icewine is added. Enhanced by the burst of flavour from Vidal Icewine, a sparkling wine of unique style and finesse is created.
FLAVOUR PROFILE
Very fine bubbles spiral upwards, through this brilliant yellow straw coloured wine.
The bouquet of apricot, yeast, and ripe apple, with hints of honey, are followed by tropical fruits on the palate and a refreshing pink grapefruit finish.
SERVING SUGGESTIONS
Serve at a cool 8 to 10ºC in sparkling wine glasses. Enjoy before a meal with salty appetizers and rich pâtés; during a meal with fish or seafood dishes, creamy risotto, and baked ham; or after a meal with creamy cheeses, crusty baguettes, and salty roasted nuts. Excellent with spicy Asian food, Indian curry dishes, Mexican cuisine, and Cajun fish and seafood. Best enjoyed within 2 to 3 years of purchase.
