WINE MAKING
A ‘Charmat Method’ sparkling wine.  Vidal (71%), Gewurztraminer (11%), Chardonnay (10%), and Muscat Ottonel (8%) are blended together to create a distinctive cuvée blend, and then fermented for a second time in a closed tank to produce the bubbles.  The wine is then clarified, a dosage is added, then the wine is bottled under pressure to preserve the bubbles.

FLAVOUR PROFILE
A clear and bright wine with tiny persistent bubbles. Fresh aromas of Bartlett pear, white peach, red apple, and a touch of floral rise from the glass. The off dry mouthfeel comes alive with refreshing bubbles and flavours of ripe orchard fruits, which also linger on the finish.

SERVING SUGGESTIONS
Serve at a cool 8 to 10°C. Enjoy while dining alfresco, for everyday refreshment, and when friends gather. Serve with your favourite cuisine including poached or baked salmon, crab cakes with spiced mayo, roasted chicken, spiced shrimp skewers, pork tenderloin with apricot glaze, baked ham, creamy Brie, and Camembert cheese. Drink young and fresh.
