WINE MAKING

Harvested from the vineyards of long-standing growers for Peller Estates [Sustainable Winegrowing Ontario Certified vineyards]. This Rosé is a blend of 61.2% Cabernet Franc, 18.4% Gamay Noir, 16.1% Merlot, and 4.3% Pinot Noir grapes which were allowed 4 to 6 hours of skin contact for a perfect pink colour, then whole bunch pressed, cool fermented and aged in stainless steel tanks. Bottled early for full fruit expression.

FLAVOUR PROFILE

A bright pinky red colour with a clean fruit aroma of strawberry, red cherry, watermelon, red currant, and rose petal. This rosé is light-bodied, soft, and easy, with flavours of red berry and cherry, which also linger on the dry-ish finish, with an added note of red berry tea.

SERVING SUGGESTIONS

Serve chilled at 10 to 12°C. Enjoy as a mid-afternoon sipping wine or serve with Margherita pizza; Tapas; Greek salads; crab cakes; baked salmon; gazpacho; cold cuts and charcuterie; shellfish; roast pork; pork tenderloin with rhubarb sauce; savoury chicken tagine; Tourtiere and tangy chili sauce; turkey with cranberry sauce; feta cheese; feta bruschetta. Drink while young and fresh.
