WINE MAKING
Harvested from select vineyards within California and Ontario Canada. After traditional red wine making the California (75%) Cabernet Sauvignon was aged in French and American oak barriques for 14 months. Two lots of Ontario grapes provided 25% of the blend [14% Cabernet Sauvignon from the 2022 vintage and 11% Merlot, Cabernet Sauvignon, Cabernet Franc blend from the 2021 vintage saw subtle oak integration]. The wine under-goes a full malolactic fermentation to soften and round out the mouthfeel.

FLAVOUR PROFILE
A deep garnet colour with a warming bouquet of ripe blackberry, black currant, sweet spice, oak, and vanilla extract. This Cabernet Sauvignon has a medium to full-bodied frame, with soft drying tannins, and moderate acidity. Flavours of black fruits, sweet spice, vanilla, and oak develop on the palate. The dry lingering finish shows notes of black fruits, cocoa powder, vanilla bean, and spicy oak.

SERVING SUGGESTIONS
Serve at a cool room temperature of 16º to 18 ºC. Serve with two-year-old Canadian cheddar and Bellavitano Balsamic cheese; beef tenderloin in rich red wine reduction or topped with melted blue cheese or rich melted butter; grilled red meats (medium to medium-rare); rosemary lamb chops; pot roast; 70% dark chocolate. Drink now or cellar through 2026.
