Wine Making
Harvested September 26 from Glenlake Vineyard (66.7% Sauvignon Blanc) and Neufeld Vineyard (33.3% Semillon) in the Niagara Lakeshore Sub-Appellation [Sustainable Winegrowing Ontario Certified Vineyards]. Only premium free-run juice used for full expression of the fruit. Barrel fermented, then aged for 10 months in 100% French oak barrels to develop a rich, complex mouthfeel. Top barrel selection to determine the final blend.

From a premium Niagara-on-the-Lake site, the Semillon in this wine adds structure, ageability, and texture. As a blend partner to our expressive, and vibrant Sauvignon Blanc, we’re aiming to make a wine that is complex with great length and power. Serving Suggestions
A wine to sip slowly to savour its texture and flavours. Serve lightly chilled at 14 to 16°C. Serve with grilled white fish; cedar-planked salmon; creamy pasta dishes with smoked chicken and herbs; herb vegetable quiche; herbed roast chicken. Best enjoyed now through 2030.
