This toasty Chardonnay is perfect for wine lovers who love smooth and delicious oak flavours. This Ontario Chardonnay is dry and round after fermenting and aging in French Oak and our Ice Cask Whisky oak (American oak).
Medium to fuller bodied, expect delicious flavours of sweet spice, toasty oak, grilled pineapple and vanilla bean. With an ultra smooth long finish, this irrestible wine makes for a great sipper and pairing with smoked dishes, roasted chicken and any creamy cheese dishes.

WINE MAKING
The Chardonnay grapes were harvested from vineyards within the Niagara Peninsula. This wine was fermented and aged for 6 months using French oak before the blend was created. A portion of the wine (10%) spent an additional two months aging with our ‘Ice Cask Whisky’ oak (100% American oak); this adds punch and power to the mouthfeel, along with increasing the wines ageability and subtle notes of the ‘Ice Cask Whisky’.
FLAVOUR PROFILE
Clear and bright with a shiny straw yellow hue and a lovely bouquet of sweet spice, toasty oak, grilled pineapple, red apple, and vanilla bean. This medium to full-bodied Chardonnay has a smooth, slightly rich mouthfeel and flavours of toasty oak, spice, apple, and pear. Spicy oak, apple, pear, and vanilla bean linger on the finish.
SERVING SUGGESTIONS
Serve slightly cool of 14 to 15°C. Serve with smoked cheddar and smoked creamy cheeses with walnut breads; smoked chicken in a cream sauce over pasta; turkey pot pies; rich lobster dishes; mushroom risotto; smoked salmon quiche; barbecued buttered corn-on-the-cob. Drink now to 2026.
