Our signature Chardonnay grapes are harvested from Fruithaven Vineyard in the Four Mile Creek sub-appellation of Niagara-on-the-Lake. The free run juice is barrel fermented and aged sur lie for 10 months in 100% French oak barrels (25% new oak). Battonage (lees stirring) was carried out for four months post-fermentation to enhance flavour and texture of the wine. A small portion of the wine underwent a malolactic fermentation within barrel to round out the mouthfeel. Only 428 cases made.
Straw yellow hue with a well-integrated bouquet of yellow apple, tropical fruit, brioche, cream, butter, oak, and spice. A full-bodied, smooth, rich, and flavourful Chardonnay. Serve chilled and pair with creamy risotto, butternut squash ravioli, roasted chicken and local cheese plates.
