Deep garnet colour with a brick red rim. The warming bouquet shows aromatic notes of smoky oak, charred wood, spice box, whisky barrel spice, and dark currant. A full-bodied red blend with firm drying tannins. This brooding, deep, complex red wine has flavours of muddled blackberry, coffee bean, and vanilla bean, along with notes of our Red Cask Whisky. Roasted coffee bean, vanilla extract, spicy oak, smoke, cocoa powder, and blackberry notes linger on the extra dry finish.

WINE MAKING

Harvested from vineyards within the Niagara Peninsula. The unique blend consists of 3 barrels of wine; two Cabernet Sauvignon barrels aged in Red Cask whisky oak barrels (2015 vintage for 8 years, and 2016 vintage for 7 years), and one barrel of Meritage (57% Merlot, 27% Cabernet Sauvignon, 16% Cabernet Franc) from 2021 vintage aged in a French oak barrel for 18 months. Blended, then bottled unfiltered, June 27, 2023.

SERVING SUGGESTIONS

Serve at a cool room temperature of 17 to 18°C. Serve with aged cheddar and extra old gouda cheeses with walnut breads; seared red meats with rich red wine reductions; smoked red meats; roasted leg of lamb; rich beef, bean, and mushroom stews; grilled Portobello mushrooms with a drizzle of aged balsamic. Enjoy after dinner, fireside, with a cigar and toasted walnuts and blue cheese. Decanting is recommended if drinking now through 2025. Drink now to 2029, or perhaps longer.
