Bright garnet colour with a warming bouquet of spice box, smoky oak, earth, and cocoa, with supporting fruit notes of blue plum and black currant. A full-bodied red blend with soft drying tannins, and good structure. Ripe dark fruits (blue plum, black cherry, blackberry) provide a mid-palate sweetness, while notes of spice and oak add complexity and interest to the palate. The extra dry finish has beautiful notes of dark ripe fruits, cocoa powder, sweet spice, vanilla, and black tea

WINE MAKING

The grapes were hand-harvested October 12 through November 16 from our Estate owned Carlton Farm Vineyard (13%) and from long-standing growers for Peller Estates (87%) within the Niagara-on-the-Lake Regional Appellation (All vineyards are Sustainable Winegrowing Ontario Certified). Through extensive skin contact and barrel malolactic fermentation we have developed a wine with great complexity and depth of flavour. After 12 months of oak aging, selected barrel lots were individually tasted for their structure, fruit concentration, mouthfeel, level of acidity and potential ageability. The final blend was created (Merlot 37.5%, Cabernet Franc 32.5%, Cabernet Sauvignon 27.5%, Syrah 2.5%) then aged for an additional 6 months in 100% French oak barrels (total barrel aging of 18 months). Minimal filtration before bottling, then allowed to age gracefully in bottle for one year before release.

SERVING SUGGESTIONS

Serve at a cool room temperature of 17 to 18°C in large-bowled glasses. Savour along-side grilled medium-rare red meats; grilled lamb chops; leg of lamb; roasted pheasant, quail, or duck; grilled Portobello mushrooms; 2 to 4-year-old Canadian cheddar and walnut breads. Best enjoyed now through 2029. Decanting is recommended if drinking now through 2026.
