Traditional red wine making. An assemblage of Cabernet Sauvignon (50%), Merlot (43%), Cabernet Franc (4%), Syrah (2%), and Dornfelder (1%). Subtle French and American oak integration for added depth of flavour and a full malolactic fermentation to soften the mouthfeel.
Garnet in colour with a bouquet of currant, blackberry, cherry, and subtle smoky oak, dried herbs, and spice. A medium-bodied and fruit-forward Cabernet Merlot with soft yet drying tannins and flavours of currant, cherry, and spice, which also linger on the finish with an added note of black tea.
Serve at a cool room temperature of 16 to 18°C. Serve with grilled red meats; prime rib on focaccia; pepperoni, sausage, and mushroom pizza; meat pies; beef wraps; gourmet burgers; bean stews; meaty lasagna; Portobello burgers; 1-year aged Canadian Cheddar. Drink now through 2024.
