WINE MAKING
Our Andrew Peller Icewine is made from naturally frozen Riesling grapes harvested from Niagara-on-the-Lake vineyards at -12°C. The grapes are pressed frozen, releasing only one drop of pure extract from each grape. Fermentation is performed at a cool temperature to retain fruit concentration, then aged in stainless steel.
FLAVOUR PROFILE
Bright lemon gold colour with an intriguing aroma of Meyer lemon, golden kiwi, starfruit, and floral honey. This Riesling Icewine has an elegant, luxurious mouthfeel and flavours of citrus candies and golden pineapple. The great balance between acidity and sweetness provides exceptional texture on the palate. Notes of citrus marmalade, lemon drops, and delicate honey linger endlessly on the finish.
SERVING SUGGESTIONS
Serve chilled at 8 - 10°C in small white wine glasses, 1 to 2 oz per person. Enjoy before a meal, chilled with your favourite vodka and a couple of frozen grapes for an amazing Icewine Martini. Enjoy during a meal with paté for a mouth sensation. Also, a wonderful companion to salty appetizers. Enjoy with the cheese course which may include Manchego, 2-year-old Canadian cheddar, or mild creamy blue cheeses. Enjoy after a meal, with fruit-based desserts of pear, apple, pineapple, peach, apricot, citrus, or quince. Enjoy with apple pie; apple strudel; pineapple upside down cake; peach cobbler; lemon pound cake; apricot flan. Best enjoyed through 2033.
