Yield: 6 servings

1.5 kg of lean ground beef
2 eggs
30ml olive oil
30ml grainy mustard
30ml fresh rosemary chopped
pinch of salt and pepper, and garlic
5 ml ground cumin
5 ml ground paprika
5 ml ground coriander
1 large eggplant
6 Oka cheese disks

Slice the eggplant into 6 disks (or 12 if you wish to sandwich the burger between two slices). Brush eggplant with olive oil and sprinkle with salt and pepper and garlic. Preheat oven to 475 degrees F (240 degrees C). Place eggplant on a baking sheet and cook for 10 minutes per side. Remove and cool just a bit.
Mix burger ingredients until well combined. Form the mix into 6 burgers and refrigerate until ready to grill. Grill approximately 10 minutes each side or until desired doneness is reached. When patties are almost ready, place one eggplant and Oka cheese disk on each burger. Allow the cheese to melt slightly and serve.
