Yield: 1-2 servings
1 sweet potato, peeled and diced
1 x 227g Summer Fresh Hummus
1 red onion, diced
4 leaves of lettuce
In 350°F oven roast sweet potato for about 20 minutes until cooked and golden brown. Spread 4 tbsp of Summer Fresh Jalapeno Hummus on each pita. Add equal amounts of sweet potato, onion, and lettuce to each pita. Roll wraps and serve. Enjoy!
