Yield: 6 servings

1 (9 inch) unbaked pastry shell
3 eggs
2 cups milk
1 tbsp Worcestershire sauce
1/2 tsp salt
1/8 tsp cayenne pepper
1 cup chopped fresh spinach
1/4 cup chopped green onions
1/2 cup sliced fresh mushrooms
1 cup shredded Swiss cheese

Line unpricked pastry shell with a double thickness of heavy-duty foil. Bake at 450 degrees F for 5 minutes. Remove foil; bake 5 minutes longer or until light golden brown. Reduce heat to 350 degrees F.
In a bowl, whisk together the eggs, milk, Worcestershire sauce, salt and cayenne. Stir in the spinach, onions and mushrooms. Sprinkle cheese over crust. Pour egg mixture over cheese. Bake for 60-65 minutes or until a knife inserted near the center comes out clean. Let stand for 5 minutes before cutting.
