Yield: 4 servings
1 head Romaine lettuce, torn into bite size pieces
1 lb boneless chicken breast, cut into strips
1 cup garlic-flavoured croutons
1/4 cup grated Parmesan cheese
1/4 cup olive oil
1/4 to 1/2 cup Creamy Caesar Salad Dressing
Heat oil in nonstick skillet over medium-high heat. Add chicken and cook 4 to 5 minutes or until thoroughly cooked, stirring frequently.
Remove from heat and set aside. Place lettuce in large salad bowl. Add chicken, croutons, parmesan cheese and salad dressing. Add salad dressing a bit at a time until desired moistness is met. Toss gently and sprinkle with additional grated cheese if desired.
