Yield: 2 - 4 servings


Ingredients:
1 package button mushrooms
1 Spanish onion, diced
1 tube Polenta
8oz Summer Fresh Baba Ghanouj
Bunch of celery


Method:
Slice polenta into squares and brush with oil. Place in deep pan or over the bbq. Slice mushroom, celery and onion, sauté in separate pan with 2 tbsp oil. Serve sautéed mushroom, celery and onion over seared polenta square and top with one tbsp Summer Fresh Baba Ghanouj. Garnish with red pepper if desired.
