The Trius Winery Experience
Trius Winery is a Niagara winemaking pioneer. For more than 30 years, we have been crafting fine VQA wines from premium grapes grown in the four appellations of Niagara-on-the-Lake. Nestled between the Niagara escarpment and Lake Ontario, we have made our home in a wine growing region that provides the diversity to grow a number of varietals in unique growing conditions.
Our winery provides both a wine and culinary journey like no other. Our wines and menus are inspired by the seasonal evolution of the vines that surround us, and the local produce that grows beside them.
A Note from our Winemaker Craig McDonald
These are exciting times in the cellars at Trius as we are again gearing up for harvest. The top five barrels of Chardonnay have been chosen, and are being blended together to create the Showcase Wild Ferment Chardonnay.
Moving over to the vineyards, the Clean Slate Sauvignon Blanc is set to be blended and bottled near the end of August (this, in turn, will free up barrels for the incoming juice at harvest). The Showcase Clark Farm Pinot was just recently blended, and will sit in barrel until November, when it too will be bottled. The Clark Farm Pinot has really blossomed over the past couple of years and the 2013 version looks fantastic. The vineyards are progressing well with the rainfall and cooler weather, and a drier, warmer August promises great conditions to finish off our harvest.

What did you have for dinner last night?
Beef sandwich made by my sous chef stood in the kitchen just before dinner service.
If you weren’t a chef, what would you do for a living?
Like most kids at heart it changes on the day or the weather. Cooking is a passion so it’s very hard to want to give it up.
What ingredient can you not live without?
Salt. It’s the secret ingredient that lots of people don’t know how to use properly.
Person you would most like to cook for?
My wife. On the rare occasions we do find time together, I like to impress.
Do you have any pet peeves?
Far too many to mention.
